This change updates the Docker installation instructions to use the new registry.rocket.chat endpoint to pull the rocketchat/rocket.chat container. This is part of the rollout described here: https://rocket.chat/blog/product/docker-images-change/
Issue(s)
No issues have been created for this, but have been discussed on the open.rocket.chat server with @geekgonecrazy, @Sing-Li, and @johncrisp. I can certainly make one if that's preferred, let me know.

This does update the docker-compose file - following instructions to run via Docker compose can test that side of the change.
