I recently bought my daughter one of these projectors for her birthday and my first thought after looking at it was: let's hack this. Anyways, I skimmed your log and it seems you've been able to dump the contents of a cart. Your pictures answered a few questions for me, first this is just a simple SPI Flash part with most of the pins broken out. Write protect and reset are not but that's fine.
It should be easy enough to connect a cart to a PC using a suitable connector and a USB/SPI adapter. This would allow to read and write the cart. Although to write to the cart you'd have to lift the WP pin. Internal pull-ups would like mean you would not actually need to connect WP pin to ground. If there are no internal pull ups then you'd need to lift the pin and then connect to ground. Pretty straight forward mod.
As I'm sure you've figured out, the real hard part is deciding the contents.
I am a hardware/digital engineer with plenty of experience and an interest in this project. Maybe I'll be able to help. Can you point me towards the images of your successful cart dumps?
