chore(model gallery): add qwen3-vl-2b-instruct

Description

This pull request adds a new model entry to the gallery/index.yaml file for the Qwen3-VL series. The main change is the introduction of the qwen3-vl-2b-instruct model, including its metadata, download URLs, and associated files.

Model Addition:

• Added a new entry for the qwen3-vl-2b-instruct model, specifying its name, description, Hugging Face URLs, and overrides for the mmproj and model parameters.
• Included references to two new files: Qwen3-VL-2B-Instruct-Q4_K_M.gguf and mmproj/mmproj-Qwen3-VL-2B-Instruct-F16.gguf, with their corresponding SHA256 checksums and URIs for download.
