Prep BCC Website for offseason #2

Hey @BSDG/webdev-collaborators can we take a look into getting the site prepped for the off season, maybe pull down the sign up links and put a 'May 2026' place holder or something
just an immediate fix, not the full 'lets get this years speakers and sessions added to an archive' sounds like that will be more work
lets also make sure we document the process in the README.md please
