Refactored the JWT callback in authOptions to decode user information directly from the access token, with improved role mapping and fallback logic. User fields such as name, email, username, and organizations are now extracted more reliably, supporting multiple claim sources and handling both stringified and object organization data. Also updated session callback to use the new token fields and provide sensible defaults.
