Add overrides to resolve issues with security alerts

Updates:

• Add overrides to fix issues security alerts in the nested dependencies of our dependencies (confusing, I know)
  • I believe this should resolve these two alerts:
    • https://github.com/Constructor-io/constructorio-example-react/security/dependabot/32
    • https://github.com/Constructor-io/constructorio-example-react/security/dependabot/31
  • They didn't show up when running npm audit, but there were others that were surfaced that had the same issue. Added overrides for them which fixed it
• Tested the react example and it ran just fine with no issues. 👍
• Made some small updates to fix the broken favicon and logo as it referenced old site resources which doesn't exist anymore
