[Benchmarks] Session Replay Scenario tweaks

What does this PR do?

It does the following:

• Set the session replay scenario sample rate for instrumented runs to a 100%
• Adds two text entries to the TextView component to test ellipsizeMode on Session Replay.

Motivation

We need to sample all SR benchmark runs and also be able to identify if text ellipsization works correctly on the SR player.
