This seems to only update the Africa notebooks? If you don't have time to do the EAS ones too that's fine (priority is clearly AFR) but please add a note on the PR and create a follow on EAS issue. Also - are any changes needed in the Worksheet Solutions?

Update to Iris 3.6.1, the latest stable version of Iris. This update includes the conda environment as well as small changes through all the worksheets.
