feat: Support iOS Runtime for Catalyst

• Extract .xcframework bundles from XCFrameworks.zip as they contain symlinks and cannot stay in an NPM package without being wrapped in an archive

• CodeSign frameworks in final executable -- It is required for UIKit for Mac
