What changes are us and what are from upstream? Do we need to merge main into main-bc then do this pr instead?

The only changes (outside of the upstream changes) are the docker and build env variables to change the version number to
I'm not sure if we need to do that. I'm just following the Gotbenberg update process as defined in the docs here. This is also the same process that was followed when recently updating to |
