[REQ] Support pydantic v2 in python-fastapi generator

The python-fastapi generator constructs models with pydantic v1.

It would be nice to have an option to use pydantic v2, such as discussed in this comment.

I've considered using the python generator but it doesn't match my use-case as seemlessly as the python-fastapi generator.

PR looks like exactly what I need: been unsuccessful testing as been unable to build from source.

What errors did you get?

If you're using JDK21, please run mvn clean package (if you don't have mvn installed, use the wrapper instead - mvnw.cmd or mvnw)

I was able to test #17369 with my server schema, substantial diff to the current python-fastapi generator, so one may even consider a different generator (such as the python and python-pydantic-v1 client generators).

I can only eyeball the the generated apis, and they look good, sorry I can't do anything more robust right now (but happy to revisit with a dummy api).
