Update theme to pydata-sphinx

@erikvansebille the logo in the top right is a bit small making it difficult to read VirtualShipParcels

Unfortunately its not possible to scale it up using the theme's config. We could add the text in the header like so

? Some options:

1. Have the logo in the header
2. Have "Virtual Ship Parcels" in the header
3. 1 and 2 (maybe creating a modified logo so that it doesn't have 'VirtualShipParcels' under)

Thoughts?

Good point about the logo, I suggest moving the next to the left right next to the logo. See below a version of the logo without the text

Thanks @VeckoTheGecko, but the name next to the logo is now virtualship instead of Virtual Ship Parcels. Can that be changed? Or is it related to the GitHub repo name?
