Remove NSubstitute

### Describe the suggested improvement

Repo uses NSubstitute which is not in our policy of using simple mocks instead of mocking frameworks.

Currently has a code analysis exclusion in https://github.com/Particular/ServiceInsight/blob/master/.repointegrity.yml
