New use case: Open Microscopy Environment

I went ahead and wrote a little use case page for the Open Microscopy Environment + RO-Crate (ping @joshmoore)

(Closes #487)

I ran into some error when trying to run make jekyll-docker-oneshot:

 Conversion error: Jekyll::Converters::Scss encountered an error while converting 'assets/css/main.scss':
                    Broken pipe

So I was not able to test the full website. As I haven't touched other assets, I hope it is okay.

If I should do anything else, just let me know. Thanks!

Thanks @lubianat ! I knew a little about OME-Zarr already but I have learned a lot more from this 😁

Just a couple of small tweaks needed to the title and logo size, and then we can merge.

Also, thanks for flagging that make jekyll-docker-oneshot doesn't work (I use the other build method from the docs so I wasn't aware of this)
