This PR adds a better documentation site built using VitePress. The previous site used mdBook and while its powerful and easy to get started with, extending the default theme (which uses Handlebars) is a pain in the arse. VitePress uses Vue for templates and also includes the ability to include Vue modules in Markdown files.
