Update the tutorial to not use `conda` (switch to `uv`?)

I did not change tutorial.md. I took a look and realised that I needed to test any uv instructions on a Windows computer (since, presumably many of our users will be Windows). An advantage of Anaconda is that you get a terminal with it.
