fix(calendar,dial,pickerbutton,progressbar,radio,stepper): unused custom properties

Description

Fixes to align spectrum-two with s2-foundations-redux/main, mostly defining unused custom properties, but addresses any other lint warnings or inconsistencies noted in the following components:

Calendar: Defines 1 previously undefined custom property to align with main and s2-foundations-redux
Dial: Defines 6 previously undefined custom properties, removes 3 unused custom properties
Pickerbutton: Defines 9 previously undefined custom properties to align with main and s2-foundations-redux
Progressbar: Removes 3 unused custom properties, reverts background-color to background to accommodate gradients, adjusts template to fix static variant
Radio: Defines 4 previously undefined custom properties to align with main and s2-foundations-redux
Stepper: moves high contrast block further down to align with other components' CSS structure, defines multiple undefined custom properties, adds disable-next-line comment to suppress no-unused-custom-properties warning

Validation steps

Pull down the branch and run it locally.

• Run yarn build to ensure that there is no missing metadata
• Check out calendar
  • Running yarn linter calendar returns no errors
  • The calendar component looks reasonably like its counterpart in s2-foundations-redux. Note that there may still be some inconsistencies with the actionbutton within calendar.
• Check out dial
  • Running yarn linter dial returns no errors
  • The dial component looks reasonably like its counterpart in s2-foundations-redux
• Check out picker button
  • Running yarn linter pickerbutton returns no errors
  • The picker button component looks reasonably like its counterpart in s2-foundations-redux
• Check out progress bar
  • Running yarn linter progressbar returns no errors
  • The progress bar component looks reasonably like its counterpart in s2-foundations-redux
• Check out radio
  • Running yarn linter radio returns no errors
  • The radio component looks reasonably like its counterpart in s2-foundations-redux
• Check out stepper
  • Running yarn linter stepper returns no errors
  • The stepper component looks reasonably like its counterpart in s2-foundations-redux

Regression testing

Validate:

1. The documentation pages for at least two other components are still loading, including:

• The pages render correctly, are accessible, and are responsive.

2. If components have been modified, VRTs have been run on this branch:

• VRTs have been run and looked at.
• Any VRT changes have been accepted (by reviewer and/or PR author), or there are no changes.

These background-color to background changes were a fix we'd made in #2929 to allow gradients. I think those would only occur in the express theme so that may not be something we even need to have working in this branch, but keeping it consistent with the other branches seemed like the most reasonable thing to do, open to other opinions though!
