I noticed that the default.xml still uses Android 7:

revision="refs/tags/android-7.1.1_r13"

Android 7 is (for example according to Wikipedia) outdated.

Would it be possible to use a newer Android version?
Or is there a missunderstanding on my side?

Also: Is it possible to install security updates or would I need to recompile it every time?

newer android will require adaptations on the anbox side to make it work with newer android
