Some of the variable names (importnat only for fork builds) have not been moved to the new workflows. This PR updates variabels used in various workflows to be set consistently.

In case of backwards incompatible changes please leave a note in a newsfragment file, named {pr_number}.significant.rst or {issue_number}.significant.rst, in newsfragments.
