[R] Use InMemoryDataset for Table/RecordBatch in dplyr code

This lets us consolidate our Expression handling code and prepares us for more query evaluation in the near future. As a bonus, it should also simplify our dplyr NSE function definition and make it easier to add and test them going forward.
