ARROW-10522: [R] Allow rename Table and RecordBatch columns with names()

The conda R packages are broken after this PR with the following error:

Error in Table__from_dots(dots, schema) : 
  No arrow R6 class named 'void) [T = a'
Calls: write_parquet -> <Anonymous> -> Table__from_dots
Execution halted

No idea how where to dig for debugging this.

Are you sure it's not from the PR I merged before this? #8256 seems like a more likely culprit to have broken something.

Btw, we need to add the relevant conda jobs to the r crossbow group
