[Failing Test]: macos-latest fails on actions/setup-java@v3 - can't find java 8

What happened?

macos-latest tests are constantly failing due with error on action: actions/setup-java@v3

Trying to resolve the latest version from remote

tldr - macos-latest is macos-14 on M1 where there is no Java 8 provided by Temurin.
