[Feature Request]: Generalize generate_yaml_docs

What would you like to happen?

We're building our own yaml provider of transforms and it'd be nice if we could reuse generate_yaml_docs.py to generate our API docs for it. Currently it's hard coded to only consider the builtin Beam YAML providers

I think it'd be sufficient to just add an argument to specify the provider source rather than have it hard coded to read the builtin providers.
