[Bug]: IcebergIO fails to convert an array of structs

What happened?

Error:

Exception in thread "main" java.lang.ClassCastException: class
org.apache.iceberg.data.GenericRecord cannot be cast to class
org.apache.beam.sdk.values.Row (org.apache.iceberg.data.GenericRecord and
org.apache.beam.sdk.values.Row are in unnamed module of loader 'app')

I encountered this when working on a different PR (#34799). I implemented the solution there but that PR will take some more time before getting merged.

I'll extract the solution into a new PR to get it in faster
