Allow initialization of dimensions with schema-less ingestion

Currently, if a dimensions list is present in the DimensionsSpec for ingestion, any discovered dimensions that were not included in the initial list will not be ingested.

It would be useful to allow the user to specify an initial dimension list/ordering but still ingest newly discovered dimensions, this would be helpful if index storage optimizations relying on dimension ordering are implemented.
