Task

• add English document: parammapping-plugin.md, under https://shenyu.apache.org/docs/next/plugin-center/http-process/rewrite-plugin.
• add Chinese document: parammapping-plugin.md, under https://shenyu.apache.org/zh/docs/next/plugin-center/http-process/rewrite-plugin.

How to do it

• you can do this with document template. and you can add other content not only this template.

• you should add this plugin docment in version doc with en and zh.
