Hello ardalis,
we are using your HttpClientTestExtensions in our project to simplify our endpoint testing. We are also using PATCH verb to update entities using Morcatko.AspNetCore.JsonMergePatch. This pull request is adding support for PATCH to allow testing of that and also similar scenarios. I've found a lot of inspiration in PUT verb implementation, I hope it is not a problem. Anyways I'm ready to follow your recommendations, if any, to make this contribution even better...
I hope that you'll find some of your precious time to have a look at this PR to provide feedback and later hopefully also merge it.
