Enable customization of input and output formatting in MapAction

Once nice thing about the "MapAction" APIs is that there just an expansion of middleware, so developers are still free to call methods like ReadAsJson and WriteAsJson explicitly with options, but for people you want to leverage custom parameters and return values, a way to customize the formatting would be nice.

I actually think this might be out of scope. You can customize the output with a custom IResult, you can't currently customize the input.
