Expose enableSessionReplayInUnreliableEnvironment from Cocoa

In [cocoa 8.57.0](https://github.com/getsentry/sentry-cocoa/releases/tag/8.57.0) SR is off by default in iOS 26.0 unless the `experimental.enableSessionReplayInUnreliableEnvironment = true` is passed.<br>We need to expose this in RN along with the [version bump](https://github.com/getsentry/sentry-react-native/pull/5263).
