Update default Claude/Codex/GitHub MCP versions and recompile lockfiles (keep Copilot pinned)

This issue requests CLI/tool version refreshes across generated workflows. Per maintainer guidance, this PR updates Claude Code, Codex CLI, and GitHub MCP Server defaults, while intentionally leaving Copilot CLI unchanged.

• Version scope applied

  • DefaultClaudeCodeVersion: 2.1.112 → 2.1.117
  • DefaultCodexVersion: 0.121.0 → 0.122.0
  • DefaultGitHubMCPServerVersion: v1.0.0 → v1.0.1
  • DefaultCopilotVersion remains pinned at 1.0.21 (no bump)

• Source change

  • Updated pinned defaults in:
    • pkg/constants/version_constants.go

• Generated workflow propagation

  • Recompiled workflow lockfiles so generated workflows consume the new defaults (including engine install steps, AW info version fields, and GitHub MCP container references).

• Release note entry

  • Added changeset:
    • .changeset/patch-cli-version-updates-2026-04-22.md
