Use toolchain's JDK

I come from eclipse-openj9/openj9#23240

I disabled --enable-cds...) at JabRef/jabref-koppor#721. Worked there, but not locally. The "only" difference is that I run another JDK on my machine.

Thus, I think, the plugin doesn't use the toolchain, but the "global" JDK.

The plugin already uses the toolchain specification configured in the java { } extension by default. (code / code)

The jpackage tasks could also be reconfigured with an individual spec if needed. E.g:

tasks.withType<Jpackage>().configureEach {
    javaInstallation = javaToolchains.compilerFor({
        languageVersion = JavaLanguageVersion.of(25)
        vendor = JvmVendorSpec.SAP
    }).get().metadata
}

Are you sure the toolchain selection works as expected in your case? Note that what you define is a "spec" that Gradle then matches against the toolchains it knows about. There may be more than one fitting toolchain in which case it still selects one following some rules.

You can ask Gradle about the known toolchains via: ./gradlew javaToolchains

If you still think there is an issue in this plugin, can you provide a reproduces that shows the problem?
