Recommended chunk shapes don't match text description for PRISM data

@pnorton-usgs - I just want to make sure you're getting the same values before I change them because mine are quite different from what the text suggests the recommendation used to be. I think the discrepancy is because the PRISM_v2 dataset has been updated, possibly with new data and a different chunking pattern.
