/usr/bin/instruments no longer present on XCode 13

/usr/bin/instruments has been retired in favour of /usr/bin/xctrace on XCode 13, which is a mandatory upgrade for anyone running the latest MacOS

Encountered the same issue, so I've prepared a PR with a fix that should solve this. @mwhitworth
