Allow variables to be passed in cli

could either be as a json --variable-list '{"var": "value"}' or something fancier like cURL does for headers --var value

I can work on that, in both patterns. There is a option in click that allows you to receive unknown variables, we just need to transform the data and maybe sanitize it.
