It would be nice for the 'test_lowest_versions` workflow to list deps

You can dig into the "Installing Dependencies" step in the workflow in the Github UI to find the particular versions of packages, but similar to the smoke test, it would be nice to have a separate workflow step that just runs pip list and provides the output.
