Hide potentially sensitive env variables from being logged

Creating a followup from this original issue: https://github.com/modelcontextprotocol/inspector/issues/375

The PATH bug called out here was resolved, so this enhancement is to revisit what is being logged from the environment variables being passed to Inspector.
