We should review some of the data_source definitions in metric-hub as they seem to be using nightly: https://github.com/mozilla/metric-hub/blob/9401c4f77a3e950c182eca11c9a180d8975b8979/definitions/fenix.toml#L758

This will build the enrollments/exposures queries from the dataset
fenix, which contains events from all channels, instead oforg_mozilla_fenix, which only hasnightly.
