What does this Pull Request accomplish?

Update examples to use the latest released version reference (i.e. 2.1.0) packages. Update readmes to account for the new version of Measurement Plug-In SDK.
Updated all README to include new InstrumentStudio version.

Why should this Pull Request be merged?

Updated examples to refer latest released version and its corresponding README files.

What testing has been done?

Ran tests locally. All tests which do not require hardware are successful.

I re-ran the check examples step since it errored. I don't know if that's a 'real' problem or a transitory one.
