Optional plotting of N/A (NaN) values in survey responses and custom scales

Currently the N/A values have to be quantified externally of the plot_likert function, if one wants to visualize them in side to side comparisons.
Doing so, while at the same time including custom scales with N/A, values causes some inconsistencies and issues with the centering of the plot and the center line.
