Revert "Update to golang 1.25 (#1866)"

Description of the change:

This reverts commit 80fda82 which introduces go1.25

Also reverts #1868 which also merged even though the gorleaser job was failing and is only possible with go1.25

Motivation for the change:

Somehow the change merged even though goreleaser/linux was failing. Reverting the change to clear the failure.
