Reminder: doc fixes to infer_datetime merged PR

@jorisvandenbossche pointed out some doc issues in #6021
which cause exceptions when building the docs.

Putting this here to remind us to ensure it's fixed before tagging the release
@danbirken will probably have a PR ready soon.
