[Feature] Add Logging Strategy

User Story

As a developer
I want to have extensive logging and audit logging for the ai model
So that do that I can recognize errors easy and fix them.

Description

Add a custom logger with Winston and a logging strategy. merge local logging strategy with the audit logging of the ai model.

Acceptance Criteria

• Add custom logging with Winston
• Improve dev logs
• Merge audit logging to file daily rotate, remove and get logfile for ai models.
