I can understand your request, but the FluidSynthPlugin is meant to be a single instrument plugin. It would get rather complicated, if you were to specify settings for each channel separately within a single user interface. And note that also similar and much more prominent plugins like e.g. the sfz-player sforzando follow the same single instrument approach.

If you really need multiple channels, you can split the channels of the input within the DAW and then have a FluidSynthPlugin per channel. I see that this is tedious, but on the other hand you can setup this once as a template and furthermore even are able to post-process each instrument differently.

And for the command line there is always fluidsynth, which takes some multichannel midi file and produces a ready-mixed audio file.
