[BUG] incorrect versions on API docs page

Describe the bug

Versions at https://docs.rapids.ai/api/ are incorrect.

To Reproduce

Go to https://docs.rapids.ai/api/

Expected behavior

RAPIDS calVer-versioned projects (so everything except libucxx and ucxx) should display with calVer versions like 25.08, 25.10, etc.
