✨ [Feature request]: Workflow to remove issue assignee after 7 days of inactivity.

Hacktoberfest is a month long event in the month of October where people contribute to open source projects. But at time an issue is blocked if it is assigned and there is not activity. Other contributors also can't take it up.

Describe the solution you'd like.

I will create a workflow which will automatically unassign the issue if there is no activity within 7 days.

Describe alternatives you've considered.

Other solutions are manual and requires maintainers to actively look for inactive hacktoberfest issues and follow-up with respective contributors. This approach is time consuming which can be used to solve actual queries, code review etc.
