0.7.0 release inconsistencies

Thanks for flagging @Velociraptor85. You're right on one, partial on the other:

CHANGELOG.md — confirmed stale. Three releases (v0.5.5, v0.6.0, v0.7.0) were cut without updating it. Fixed in PR #392 with full entries for each.

firmware/esp32-csi-node/version.txt = 0.6.0 — this is actually correct. The version.txt string is embedded into the ESP32 firmware binary via esp_app_get_description() and should only change when a new firmware binary is released. v0.7.0 was a model/pipeline release (WiFlow pose model + ground-truth training scripts), not a new ESP32 firmware binary. The latest firmware release is v0.6.0-esp32 which matches.

The release table in README.md differentiates them:

• v0.7.0 (no -esp32 suffix) — model/pipeline release
• v0.6.0-esp32 — firmware release
