Replace HTML bold tags with markdown in eldritch docs#1943

The documentation parser and frontend `DocTooltip` component support markdown. This change replaces explicit `<b>` HTML tags with standard markdown bold syntax `**` in `docs/_docs/user-guide/eldritch.md` and regenerates the `eldritch-docs.json` asset.
