Update all explain.txt and metadata.json files to use consistent output from ClickHouse version 25.12.1.646. Also update the default version in clickhouse.sh script.
- Update generate_explain.sh to check for existing "explain" key before adding, preventing duplicate keys - Fix 313 metadata.json files that had duplicate "explain":false keys
