Run e2e tests against different Pipeline versions #716

Feature request
Similar to how we test against multiple k8s versions , we should add testing against multiple Pipeline server versions - e.g. LTS releases, last release, nightly, etc.
Use case
Try and catch compatibility issues like #715 early.
