Update all copyright notices to have the generic notice "Copyright <year> the ros2-java contributors" This is to make it clear that the project is not owned by any particular organization and reduces burden on maintaining multiple copyright notices per file. Following our discussion in #117 (comment), I've updated all of the copyright notices to read "Copyright the ros2-java contributors".
I've also updated the AUTHORS file, inspired by https://opensource.google/docs/releasing/authors/.
@esteve Let me know if you prefer a separate CONTRIBUTORS file instead of the change to the AUTHORS file.
